Fall is among us which means all the baking!
I know it's basic, but I LOVE anything pumpkin. My personal favorite? Pumpkin bread! And the best part - it is SO easy to make. Fortunately, Taylor loves it too because it's a fall staple in our house. But his absolute favorite is apple pie. We have a great (and easy) apple pie recipe that truly tastes like fall and Thanksgiving wrapped into one.

2 cups Libby’s 100% Pure Pumpkin {or Homemade Pumpkin Puree}
3 cups Granulated {White} Sugar
1 cup Canola or Vegetable Oil
â…” cup Water
4 large Eggs
3â…“ cups All-Purpose Flour
2 teaspoons Baking Soda
1.5 teaspoons Salt
1 teaspoon Ground Cinnamon
1 teaspoon Ground Nutmeg
Instructions
Preheat oven to 350 degrees for Nonstick Loaf Pans {or 325 for Glass Loaf Pans}
Mix Pumpkin, Sugar, Oil, Water, and Eggs in large mixing bowl until well combined.
In medium mixing bowl, combine Flour, Baking Soda, Salt, Cinnamon, and Nutmeg... then whisk until well combined.
Then gradually pour flour mixture into large bowl of pumpkin mixture, and stir well to combine completely.
Spray bottom and interior sides of TWO 9×5 {or 1.5 quart} Loaf Pans with Nonstick Cooking Spray.
Pour mixture evenly into loaf pans.
Bake for 55 – 75 minutes, or until done and a toothpick inserted in center comes out clean.
Once done, transfer loaf pans to wire racks and allow to cool inside loaf pans before removing.
Apple Pie
Crust: Pillsbury or Marie Callender deep dish and roll top crust OR 2c flour, 2/3 c crisco, dash of salt
Blend together. Dash 1/2 cup of water slowly over mixture until it forms in a ball. Roll out of crust.
Filling: peel and slice 5-6 medium apples (jonagold, Jonathan) microwave slices 5-6 minutes and drain juice. Place in pie crust.
Mix 1 and 1/4 c of sugar, 1/8 c of flour, 2 tsp of cinnamon. Place over apples.
Places 2 tbsp of butter over sugar mixture. Roll on top crust. Sprinkle with sugar and cinnamon mixture. Cut slots into top crust.
Bake for 15 min at 400 then 30 min at 375
