Healthier Option: Grilled Chicken and Vegetables

I love food as much as the next person, but I also try my best to maintain a healthy lifestyle, and in order to that, I try to eat healthy meals! One of my go-to healthy meal options is grilled chicken with vegetables - and it's super easy!

 

For Grilled Chicken:

I buy chicken raw chicken tenders and grill on a pan with Kickin' Chicken seasoning. This seasoning is a tad spicy, so check your spice wrack or spice aisle at the grocery store for flavors you like! Other seasonings can easily be made by combining garlic powder and chili powder, or salt, pepper, and garlic powder!


Vegetables: At our home, we love asparagus, potatoes, sweet potatoes, salad, and more! For this post, I'll go over how we love to make grilled asparagus, sweet potatoes, or squash/zucchini.


For asparagus: wash each stem, cutting off the ends. Add a 1-2 tablespoons of oil to the stems, topping with sea salt. Cook on each side for 2-3 minutes and serve!


Sweet potato: The classic way to cook a sweet potato is to wash it, poke with a fork 20-30 times, and cook in the microwave for 5-7 minutes, or until soft! You can even cut the sweet potato into thin slices, adding seasoning, and cooking in the oven at 400 degrees for 15-20 minutes. If you're looking for a savory flavor, seasoning with garlic salt is great! For a sweet flavor, cinnamon and a pinch of sugar or brown sugar works best!


Squash and Zucchini: My favorite way to cook squash and zucchini is to cut the vegetable into small circles, adding a small amount of vegetable oil to a pan, and topping the vegetables with garlic salt, cooking until slightly translucent.
